Crunchy, homemade granola with fresh fruit and coconut yoghurt - a delicious and nutritious breakfast the whole family can enjoy!

This homemade granola tastes absolutely amazing and contains a heap of nutritious ingredients, such as oats, nuts, dried fruit and seeds. For our breakfast this morning, I added a sliced banana and kiwifruit, some coconut yoghurt and almond milk. 

What a great way to start the day, guaranteed to give you plenty of energy for the day!

Here is the recipe for our homemade Family Pantry granola. The great thing is that you will end up with a big batch of which can easily be stored in an air tight container in the pantry for a couple of weeks. It's also great for kids lunchboxes, as a trail mix or an after school snack.

Plus, it will save $$ by making your own granola instead of buying the ready-made packs  :-)

Ingredients:

1/2 cup of honey (or subsitute with organic rice syrup or organic maple syrup)
4 cups of organic rolled jumbo oats
1 cup of organic almonds, roughly chopped
1/2 cup of organic walnuts (I used cashew nuts in mine)
1/2 cup of organic sunflower seeds
1/2 pumpkin seeds 

A handful of chia seeds and linseed

1 cup of organic dried fruit (i.e. dried apricots, dates, raisins, cranberries, banana chips - mix and match as you like!)

1 teaspoon of ground cinnamon (optional) 

A handful of desiccated coconut (optional)

 

Method:

1. Preheat oven to 180C. Warm the honey (or rice/maple syrup) in a small saucepan to get it to a runny consistency

2. Combine all of the remaining ingredients in a large bowl - mix well.

3. Add the runny honey (or rice/maple syrup) to the bowl.

4. Thoroughly stir the mixture until all grains, nuts, seed and dried fruit are coated.

5. Spread mixture evenly onto a lined baking tray and bake for 15-20 minutes. It is important to stir the granola every now and again while baking, to prevent it from burning.

YOU'VE GOT TO WATCH IT LIKE A HAWK, AS IT CAN BURN QUICKLY!

Serve with some fresh, seasonal fruit, yoghurt, quark and/or your favourite milk.  YUM!
