Lemon Coconut Bliss Bites

Sweet and tarty lemon coconut energy bliss bites are on top of our favourite snack list, not only for the kids but for us adults as well! These treats are great for kicking bad sugar to the kerb, and make snacking on the good stuff fun. They're moist, chewy and packed with healthy ingredients like nuts, dates and coconut and best of all they are super easy to make.

Ingredients:

1 cup cashews

1 cup desiccated coconut

7 dates, pitted

1-2 tbsp maple syrup

Juice from 1-2 lemons

Zest from 1 lemon

1 tsp vanilla extract or essence

 

Instructions:

  1. Add all ingredients to a food processor
  2. Process until no visible chunks remain
  3. Taste and adjust sweetness if desired by adding more maple syrup.
  4. Transfer to a bowl and place in the fridge to set. This will make it easier to roll into balls.
  5. After about 30 mins, scoop out 1 tbsp of dough and roll into about 1 inch balls.
  6. Carefully roll in desiccated coconut if desired.

 

Recipe notes:

The bliss bites can be stored in the fridge for up to 1 week, or in the freezer for a few weeks.
