Bird Seed Slice

A super delicious Birdseed Slice the whole family will love. Use whatever combination of seeds takes your fancy. 

 

Ingredients:

2 cups jumbo oats

1 cup sunflower seeds

1 cup pumpkin seeds

1 cup sesame seeds

1 cup chopped dried fruit

120g butter

5 tbsp honey

8 tbsp coconut sugar

1/3 cup peanut butter

 

Instructions:

1. On a baking tray, mix together the oats and the seeds. This is a very flexible recipe, so substiture your own favourites. You could, for example, replace 1/2 cup of chia seeds or linseed for half the sesame seeds. 

2. Toast the oats and seeds for 15 minutes in a 180 deg celcius oven, stirring often.

3. Remove from oven and pour into a large bowl, and stir in 1 cup of dried fruit. You can use a combination of chopped dates, raisins and cranberries. Use whatever you like.

4. Line a baking tray with baking paper and set aside. 

5. In a small pot, melt together butter, honey, coconut sugar and peanut butter.

6. Stir as it heats and simmer for 5 minutes on a low heat until it becomes a caramel.

7. Add the hot caramel to the toasted oats and seeds mix. Be careful as it will be very hot and can really burn. Stir to comine, working quickly as it sets fast.

8. Pour into lined baking tray, pressing into the edges and corners. You can put a piece of baking paper on top and push down to compact the mixture onto the tray.

9. Refrigerate for 3-4 hours. When cool, cut into squares or bars, and store in an air tight container.
